Zesty amaranth salad

Ingredients:

1 cup amaranth 

2 cups water or vegetable broth

1 cucumber, diced

1 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1/4 cup fresh parsley, chopped

1/4 cup fresh mint, chopped

1/4 cup extra virgin olive oil

2 tablespoons lemon juice

Salt and pepper to taste

Instructions:

Rinse the amaranth under cold water, then combine it with water or vegetable broth in a saucepan. Bring to a boil, then reduce heat and simmer for 15 minutes  just until  cooked and the liquid is absorbed and the amaranth is tender. Remove from heat and let it cool.

In a large bowl, combine the cooked amaranth, cucumber, cherry tomatoes, red onion, parsley, and mint.

In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the amaranth mixture and toss to coat evenly.

Chill the salad for at least 30 minutes before serving to allow the flavours to meld.

Spiced baked sweet potato fries

Ingredients:

2 large sweet potatoes, peeled and cut into fries

2 tablespoons olive oil

1 teaspoon paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon cumin

Salt and pepper to taste

SPICY AIOLI

1/2 cup avocado oil , olive oil or less fatty based mayonnaise

1-2 tablespoons lemon juice

1 teaspoon Dijon Mustard

1 clove garlic grated

1/2-1 teaspoon cayenne pepper 

Instructions:

Preheat the oven to 425°F (220°C) and line a baking sheet withparchment paper.

In a large bowl, toss the sweet potato fries with olive oil, paprika, garlic powder, onion powder, cumin, salt, and pepper until evenly coated.

Arrange the fries in a single layer on the prepared baking sheet.

Bake for 20-25 minutes, turning the fries halfway through, until they are golden and crispy.

To make the aioli. Mix all ingredients in a bowl until smooth and creamy. Season with salt.

Serve the fries with spicy aioli and ketchup. Enjoy!
